Spicing Up Scrambled Eggs

Ahhh, the incredible edible egg. No other food is as remarkable and so versatile. According to the Egg Council, Americans favorite way to enjoy eggs is scrambled. Yummy, easy to make and done in a flash, it's easy to see why scrambled eggs have so many admirers.

But plain scrambled eggs can get a get a little bit boring. Just by adding some simple new ingredients, your eggs can seem like a whole new dish. Try these suggestions for breathing new life into your usual scrambled eggs. Suddenly scrambled eggs will be new and different again. Goodbye, old, predicable and boring. Hello, fluffy, spicy and unexpected!

Scrambled eggs

In a blender, add two eggs and 1 tablespoon of cream, milk or water per person. Pulse to mix until foamy and yellow.

In a medium skillet, add 1 tablespoon of butter and melt over low heat. When the butter begins to brown, pour the egg mixture into the skillet. Add any additional ingredients. Using a wooden spoon, stir the eggs, slowly pushing them around in the skillet until large mass of fluffy, soft curds form. Add salt and pepper to taste. Turn scrambled eggs out onto a warm plate and enjoy.

Scrambled egg tips:

  • Cook your eggs over low heat and stirring constantly with a wooden spoon will produce the creamiest, softest curds. It may take a few minutes, but your patience will be well rewarded.
  • Don't overcook your eggs. Eggs continue to cook after you remove them from the heat, so turn them off a minute before you think they are done.
  • Use butter for a nutty flavor. Cooking your scrambled eggs in olive oil gives them a light, fruity taste.
  • Add a squeeze of lemon juice to make your eggs even more tender.

Ingredients to jazz up your scrambled eggs:

(Measurements per 2 eggs)

  • Add 1 tablespoon each of pepper-jack, cheddar and Swiss cheese
  • Chop 1 pineapple ring, add with 2 tablespoons shredded or diced ham
  • 1/4 cup smoked salmon, 3 tablespoons cream cheese, 2 tablespoons diced green onions
  • 1/4 cup mozzarella cheese, 2 tablespoons Marinara, 6 slices pepperoni
  • 1 tablespoon chopped fresh herbs or 1 teaspoon dried
  • 1/4 cup sour cream
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup sun-dried or 1 chopped fresh tomato with a sprinkle of feta cheese
  • 1/2 cup salsa and 3 tablespoons Monterey Jack cheese
  • 1/4 cup diced green chilis or jalapenos with cheddar cheese
  • 1 clove minced garlic and 1 small onion, chopped
  • 3 or 4 shakes of Tabasco sauce
